The American Dream
Born in San Miguel del Padrón, Havana, Cuba, Aldo and Mara Espinosa grew up in a humble home shaped by hard work and perseverance under the guidance of their parents, Nicholas and Blanca. After arriving in the United States, that same creativity and determination intensified, transforming his love for cooking into a deeper entrepreneurial vision — a vision that would soon take its first real form with the launch of his very first food truck.
The Start...
In 2014, Aldo opened his first food truck,El Toro Loco Churrascaria, located in front of the FIU campus. The concept quickly became a success, centered around high-quality meats offered at great prices, attracting students, families, and locals alike. For three long years, Aldo and his team worked tirelessly, building a loyal following and refining their concept — laying the foundation for what would soon become the opening of their very first El Toro Loco Churrascaria location.
Now in 2026...
Entering the modern era, the El Toro Loco brand continues to expand with the introduction of El Toro Loco Ranch, a unique outdoor concept in the Homestead area featuring entertainment, horse riding, scenic views, and a modified menu designed to enjoy Miami’s beautiful weather. Shortly after, the brand celebrates the opening of the Doral Square location in 2026, a beautiful and modern restaurant that reflects the continued evolution of El Toro Loco. Also launching in 2026, El Toro Loco Butcher Shop will bring the same high-quality meats served in the restaurants directly to the community at the best prices, both online and in a physical location. Meanwhile, El Toro Loco MMA continues to take off, with Aldo managing fighters across multiple promotions and becoming a recognized force in BKFC, sponsoring number one contenders, champions, and rising stars as the El Toro Loco brand continues expanding into new industries.
