Learn more about Chef Aldo Espinosa, his entrepreneurial journey, the El Toro Loco brand, and the vision behind his businesses, achievements, and future goals.
The Beginning
Humble Roots in Cuba
Born in San Miguel del Padrón, Havana, Cuba, Aldo and Mara Espinosa grew up in a humble home shaped by hard work and perseverance under the guidance of their parents, Nicholas and Blanca. Seeking greater opportunity, their family made the courageous decision to come to the United States, where Aldo arrived at just 11 years old, marking the beginning of a journey that would eventually lead to two future entrepreneurs and visionaries.
A Young Entrepreneur in Miami
As a young adult in Miami, Aldo Espinosa’s passion for food continued to grow. Even back in Cuba, he would experiment in the kitchen while his parents were at work, preparing meals for the family using whatever ingredients were available. After arriving in the United States, that same creativity and determination intensified, transforming his love for cooking into a deeper entrepreneurial vision — a vision that would soon take its first real form with the launch of his very first food truck.
2014
The First Food Truck
In 2014, Aldo opened his first food truck, El Toro Loco Churrascaria, located in front of the FIU campus. The concept quickly became a success, centered around high-quality meats offered at great prices, attracting students, families, and locals alike. For three long years, Aldo and his team worked tirelessly, building a loyal following and refining their concept — laying the foundation for what would soon become the opening of their very first El Toro Loco Churrascaria location.
2017
A Dream Becomes a Restaurant
In 2017, Aldo opened the first El Toro Loco Steakhouse at 13800 SW 8th Street, marking the beginning of the brand’s expansion. Aldo credits this milestone to his dedicated team, whose long hours and commitment helped turn a dream into reality. Every brick, table, and chair was handcrafted by Aldo’s father, Nicholas, using leather, wood, and cow hides to create the signature El Toro Loco rustic atmosphere. This first location became the foundation for what would soon grow into one of Miami’s most recognized steakhouse brands.
Rapid Expansion
Following the success of the first location, El Toro Loco Steakhouse rapidly expanded across Miami with new restaurants in Tamiami, Westchester, Kendall, Hammocks, and Little Havana, along with multiple food trucks in Doral, West Kendall, Pinecrest, Bird Road, and Bayfront Park. Aldo credits this growth to his loyal #ToroFans and his unique fusion of Brazilian steakhouse tradition with a Miami twist, which kept guests returning time after time. The menu expanded to include premium meats from Japan, Australia, and the United States, including Wagyu beef and the world-renowned A5 from Kagoshima, alongside beloved favorites like croquettes and the iconic torreja. Through massive grand openings, community events, and unbeatable quality at great prices — earning him the nickname “The Robinhood of Meats” — Aldo gained major press coverage including Forbes and Fame Magazine, as El Toro Loco evolved from a restaurant into a growing brand with even bigger ventures ahead.
A Brand Begins to Take Shape
While expanding restaurant locations and food trucks across Miami, Aldo’s entrepreneurial vision continued to grow alongside the El Toro Loco brand. During this time, El Toro Loco Home & Design began producing high-quality furniture and woodworking, including the iconic blue resin tables and cowhide seating featured throughout the restaurants. El Toro Loco Meat Distribution was also developed to source and distribute premium meats from around the world, ensuring consistent quality across the brand. At the same time, El Toro Loco TV launched on Mega TV, quickly becoming a nationally streamed program and a hit success, earning strong ratings and expanding the El Toro Loco name beyond restaurants into a complete and growing lifestyle brand.
2024-2026
The Modern Era
Entering the modern era, the El Toro Loco brand continues to expand with the introduction of El Toro Loco Ranch, a unique outdoor concept in the Homestead area featuring entertainment, horse riding, scenic views, and a modified menu designed to enjoy Miami’s beautiful weather. Shortly after, the brand celebrates the opening of the Doral Square location in 2026, a beautiful and modern restaurant that reflects the continued evolution of El Toro Loco. Also launching in 2026, El Toro Loco Butcher Shop will bring the same high-quality meats served in the restaurants directly to the community at the best prices, both online and in a physical location. Meanwhile, El Toro Loco MMA continues to take off, with Aldo managing fighters across multiple promotions and becoming a recognized force in BKFC, sponsoring number one contenders, champions, and rising stars as the El Toro Loco brand continues expanding into new industries.
